Maple banana pancakes recipe
Campfire cooking
The food that took Edmund and Tenzig to Everest... maybe. Fluffy, satisfying, sweet... Brb, going to get a pancake on! Level up by making a pre-pancake coffee. You can thank us later!
Ingredients
1 cup self raising flour 3 tbsp caster sugar 1 cup of water Softened butter for cooking Maple syrup Sliced banana Bacon (optional)
Makes: 6-8 small pancakes
Method for the pancakes
Turn the stove on to medium heat - or cook outside on the fire if you’re feeling adventurous! If you go the fire route, be sure to use the cast iron skillet.
Put the flour, sugar and water in a bowl and mix well to form a smooth batter with no lumps (if you do have a few lumps, get a fork and whisk them out).
Add a good dollop of butter to your frying pan and place on the heat until sizzling.
Pour in enough batter to coat the base of the pan and swirl it around to even it out. Cook until bubbles appear on the surface of the pancake, then flip it over and cook the other side.
Repeat with the remaining batter, adding more butter as needed.
Serve with lots of maple syrup and banana.
Method for the bacon (optional)
Start with a cold pan and place your bacon in the pan (without crowding them) and place on the fire or stove at medium heat.
Watch the bacon sizzle and turn translucent. Turn over a few times until it’s crisp and stops sizzling.
